The King's Bakery

Authentic bread. Timeless tradition.

🧱 Step into a Working 18th-Century Bakery

Tucked within the walls of the Fortress of Louisbourg, the King’s Bakery offers more than just bread — it offers a taste of history.

Originally built to supply fresh loaves to the French garrison, this royal bakery was distinct from the many commercial bakeries that competed to serve townspeople in 18th-century Louisbourg. It operated solely for military use, with four bakers who lived upstairs above their ovens and worked tirelessly to feed hundreds of soldiers each day.

Though the original structure was destroyed by fire in the 1700s, its stone floors survived intact and have been preserved in the reconstructed building you see today.

Today, visitors can explore this restored space, watch bread being made using traditional methods, and purchase a warm, hearty loaf fresh from our stone oven.

🏛️ A Bakery with a Story

“Several commercial bakeries competed to serve the townspeople, but this royal one supplied the garrison only. The four bakers lived above the bakery and worked in shifts to meet the army’s needs. Though the bakery was destroyed by fire in the 18th century, its original floors remain preserved, anchoring this remarkable reconstruction in authentic history.”
